The salad to convert you; Bacon, lettuce & tomato

If you ever hear someone say they don’t enjoy salads, or if you are that someone… this is the salad that you won’t stop making. Personally, I try eat healthy but I get carried away easily due to factors I can’t control… so this salad is a way of confronting me that I am having a super healthy meal.

Prep time: 15 min

Cook time: 10 min

Total: 25 min

Serves: 2

Ingredients:

Salad dressing:

  • 1/2 cup Plain Greek yogurt
  • 2 tbsp milk
  • 1 tsp lemon juice/ vinegar
  • 2 tsp chives; chopped
  • 1/2 tsp garlic powder
  • Salt & pepper to taste

Salad:

  • 1/2 head lettuce; washed and chopped
  • 100gm Cherry tomatoes; halved
  • 100gm Bacon
  • 1 avocado; sliced
  • 3/4 cup croutons
  • 1/2 red onion; thinly sliced lengthwise

Method:

  1. Prepare the salad dressing. In a bowl, add Greek yogurt, milk, lemon juice, chives, garlic powder, salt & pepper. Whisk until everything is well combined and smooth. Chill in the refrigerator
  2. Cook the bacon till crispy for about 10 min. Once cooked, chop into bite size pieces
  3. In a plate/ bowl, add the lettuce, tomatoes, avocado, croutons, onion and bacon
  4. Drizzle the dressing over the salad and serve, enjoy!
