MANGO SALSA CHICKEN TACOS

CREATING SOME DELICIOUSNESS WITH @(__tarara)

I can’t emphasize how much I love chicken… I could talk about it all day, I swear haha! So I always find different ways to go about with it and this Taco recipe is one easy way that you should try out! You will be addicted.. which I’m sure, is a good thing ?.

After reading this, you will realize that you can make your own heaven of food at home, even if you are a beginner cook. These TACOs will have you wanting more always!

Tara and I decided to collaborate and I was beyond excited for this, so we chipped in our ideas and made this magic!

Prep time: 30 minutes

Cook time : 15 minutes

Serves : 4

Here is what you need :

  • 4 tortilla wraps (soft) – Can be purchased at Carrefour or Foodplus
  • 2 Chicken breasts
  • 1/2 a teaspoon of black pepper
  • 1/2 a teaspoon of cumin
  • 1/2 teaspoon of paprika
  • 1 teaspoon of salt
  • 1 teaspoon of soy sauce
  • Half a lemon
  • 1 tablespoon of teriyaki sauce
  • Mayonnaise
  • Oil
  • 2 diced onions
  • 2 finely cut tomatoes
  • 1 mango ; cut into cubes
  • Cilantro

Method

  • Cut your chicken into cubes
  • In a bowl, add in your chicken. Marinate it with black pepper , salt, paprika , cumin , soy sauce & lemon juice for about 30 minutes
  • In a pan, add in oil and heat it on medium heat
  • Once the oil is hot, add in your chicken
  • As the chicken is cooking, add in your teriyaki sauce and mix it in with the chicken
  • Cook the chicken breast until it browns for about 10-12 minutes
  • Turn off the heat and put the chicken aside
  • Turn on your heat once again and place one tortilla wrap at a time , each for 15 seconds on one side till it forms chars (black spots)
  • In a bowl, add in your diced onions, tomatoes and mangoes and mix them together. Garnish with cilantro

NB: soak your onions in warm water so as to kill the strong scent and prevent onion breath

Finally, assemble your Tacos be layering the wrap first, followed by the chicken then the salsa

Drizzle some mayonnaise on top and enjoy the goodness that you just created!
