Burger Heaven : Crispy Chicken Burger

I LOVE BURGERS. Yes, that is my first statement to this post. What would the world be without burgers? No no we can’t imagine that!

The main reason I prefer making my burgers from home is because I get the chance to build the burger with the flavors I genuinely like and prefer. This year we are saving money, and one of the ways to do so is by cutting out on eating out. Like, come onnnn guys.. I am just a DM away, if you are troubled thinking what you can make, ask! I will be happy to help you.

Here is a burger eating tip : if the burger is too huge, cut it into two and eat one half at a time. It saves you the mess.

What I am always keen on when making my burgers is the bun that I use and how the meat cooks. The rest fall into place and can easily be changed. So, without more stories, let me take you through on how to make this absolutely delicious burger.

Prep time: 20 min

Cook time: 15 min

Serves : 2

Ingredients:

For the Marinade:

  • 2 chicken breasts
  • 1/2 a cup of Buttermilk ( Maziwa Mala)
  • 1/2 a teaspoon of salt
  • 1/4 a teaspoon of white pepper
  • 1 teaspoon of garlic powder

For the Chicken Coating:

  • 1/2 a cup of all purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of garlic powder
  • 1 teaspoon of black pepper
  • 1 teaspoon of thyme
  • 1 teaspoon of baking powder
  • 1 teaspoon of paprika
  • 1 teaspoon of chili flakes (optional)

For the Coleslaw:

  • 1/4 of white cabbage
  • Half a carrot (thinly sliced)
  • 1 tbspn of Mustard
  • 1 tbspn of Honey
  • A splash of lemon juice
  • 2 tbspn of Mayonnaise
  • Some pepper (a pinch)

General:

  • 2 Burger buns ( I purchased mine from Carrefour Bakery)
  • 1/4 a lettuce
  • 2 slices of cheddar cheese
  • 1/2 an onion ( thinly sliced)

Method:

  1. In a bowl, place in your chicken and the marinade ingredients. Mix them all together, cover with cling film and put it in the fridge to marinate for at least an hour or overnight.
  2. Preheat your oven on low heat to keep it warm. In a large pan, add in your vegetable oil and let it heat.
  3. In a small bowl, mix the coating ingredients together. Remove the chicken from the fridge and place it in the mixture ensuring it is fully coated
  4. When the pan is hot enough, place in your chicken breasts and let it cook for 5-7 minutes until golden brown and well cooked on the inside.
  5. Place the chicken on an oven tray and add the cheese on top. Then place it in the oven and let the cheese melt on the chicken,
  6. For the coleslaw, mix all the ingredients and make sure the carrots and cabbage are thinly sliced. Mix it well together, cover it and refrigerate until time to serve.
  7. For assembling the chicken, take them out of the oven and place them aside
  8. Slice your buns into halves. Add your lettuce, followed by chicken then topped with the coleslaw. Finally cover the burger.
  9. Serve and enjoy!
